Starter: Venison tartare with crispy potato, spruce shoot aioli, Svecia cheese, and herb salad
Soup: Creamy lobster soup with cognac, seared scallop, rye bread crisp, and pickled red chili
Main Course: Puff pastry-wrapped fillet of beef with smoked bacon, haricots verts, mashed almond potatoes with Västerbotten cheese, and black truffle sauce
Dessert: Chocolate bavaroise with Italian meringue, chocolate croutons, raspberry sorbet, and watercress
